Taste the local specialities

Here, we’re all about fries!

In the North of France, we’re famous for our fries! But there’s much more to discover. Our specialities are just like the people here: names you might struggle to pronounce, but generous flavours in every bite! Waterzooi, flamiche, beultekaze, podingue and potjevleesch… So many local specialities to try, best enjoyed with a good beer from the North.

Freshly caught or smoked fish

Fish is a local tradition!

In the morning, head to the fish stalls at Place du Minck in Dunkirk to buy the day’s catch. In Grand-Fort-Philippe, discover traditional fish smoking at Saurisserie Janin, where this know-how has been passed down from generation to generation.

Fish prepared in all kinds of ways, along with the region’s famous moules-frites, feature on the menus of most restaurants along the coast.

The Potjevleesch

This traditional Dunkirk dish is made with three to four types of meat set in aspic.

It is served cold with fries and salad.

You’ll find it on the menus of brasseries and traditional estaminets throughout the region.

The Waterzooï

You have two options: the classic and flavourful fish Waterzooi, or the comforting chicken Waterzooi. Here, we’ve chosen the “Seaside” version… This recipe comes straight from our Belgian neighbours and friends, who are always brimming with creativity. The secret to this delicious dish lies above all in the cooking, but also in the quality of the ingredients.

The delicious Dunkirk waffle

Crispy and crunchy, its recipe has been passed down from generation to generation. Tradition had it that at Christmas, friends and family would treat one another to this little sweet delight. This delicious biscuit comes from the Blootland, the Flemish coastal plain.

Here, in a few words, is the traditional recipe that the whole family will enjoy.

The finger of Jean Bart

Your first Food Stop takes you to Rue du Sud, to a beautiful pastry shop in the heart of Dunkirk. Your first taste of local treats begins with an elegant display showcasing beautifully arranged cakes, pastries and macarons. Your “Chocolate Tour” pauses for a moment at a biscuit featuring the likeness of Jean Bart.

Oblong in shape, this Dunkirk speciality was created in 1953 in the workshop of Jean VANDEWALLE, a pastry-making family business passed down through generations. This homemade, purely artisanal chocolate treat is best enjoyed at room temperature, around 16°C. It consists of an almond cake with a coffee-flavoured centre, coated with a layer of chocolate that chocolate connoisseurs have praised for its exceptional quality.
